Malpua

Ingredients:

  • 1 cup of milk.
  • 1 teaspoon aniseed.
  • 1 tablespoon of poppy seeds.
  • 1 teaspoon of black cardamom.
  • 4 tablespoons of flour
  • 2 teaspoons of sugar in powder
  • Ghee

Method:

  • Mix the flour, milk, and sugar together thoroughly until the sugar is thoroughly dissolved.
  • Add aniseed, poppy seeds, and black cardamom (all 1 tablespoon) to the mixture and stir thoroughly.
  • Pour ghee into a frying pan for deep frying.
  • With a spoon, add the mixture to the frying pan’s heated ghee.
  • The Malpuas should be fried till golden brown.

Gulab Jamun

Ingredients:

  • 40 gms. of chhena
  • 200 gms. of mawa
  • 1/4 tsp. soda bicarbonate
  • 2 tablespoons of flour
  • 1/2 teaspoon of green cardamom powder
  • Deep-frying with ghee or oil
  • 400 g of sugar

Method:

  • The Mawa and Chenna are grated.
  • To create a soft dough, combine mawa, chenna, edible soda, green cardamom powder, and a little water.
  • Make six equal balls out of the soft dough.
  • Put little saffron and green cardamom powder inside these balls.
  • By combining sugar and water in an equal amount and heating it, you can make sugar syrup.
  • To deep fry the softballs, add pure ghee or oil to a pan.
  • Place the balls in the sugar syrup for 10 to 15 minutes after they are golden brown.

Ras Malai

Ingredients:

  • Whole-milk ricotta cheese container (15 ounces)
  • 1/4 cup of white sugar.
  • 1/4 teaspoon of ground cardamom
  • 1 pinch of saffron
  • White sugar, 1 cup
  • 1/2 teaspoon of optional rosewater.
  • 2 teaspoons of chopped pistachio nuts.
  • 1 tablespoon of chopped blanched almonds.

Method:

  • Put the chena on a dish and use your hands to mash it into a smooth, dough-like consistency.
  • Take a small amount of the chena, place it between your palms, and press it flat and round with your hands.
  • Take a pan and add 500 gms of water and 1/4 cup of sugar to it. The mixture will boil if the pan is left on a flame. Once the water has fully boiled, add all of the flat chena discs to the pan.
  • For 18 to 20 minutes, cook it. While making the rasmalai, keep the flame on medium. As the rasmalai balls boil in the water, they will grow larger. The balls of rasmalai are prepared.
  • Once the milk begins to boil, keep the pan over the burner and whisk it constantly. Pour the milk over the kesar and mewa. Once the milk has been reduced to half or 60 percent of its original volume, turn off the flame. Add cardamom and sugar to it.
  • Rasmalai should be removed from the sugar syrup, squeezed with your palms to remove any remaining water, and then placed into the milk.
  • Place it in a serving basin and top with cashews and pistachios. Serve it after allowing it to cool.

Gujia

Ingredients:

  • 550 g, of maida (flour).
  • Soya, 1.25 kg
  • Raisins, 5 tbsp.
  • 200 g of thinly sliced almonds
  • 6 tbsp. of cooking oil (keep some more aside for deep frying)
  • 200 ml of water, 500 g of sugar

Method:

  • Mix the maida with the six tablespoons of oil.
  • Now, as needed, add water and knead the mixture into a soft dough.
  • Put a moist cloth over it and set it away.
  • In a deep frying pan, cook khoya until it turns light brown.
  • Mix the khoya well after adding the sugar, almonds, and raisins.
  • Take it out of the flames and let it cool.
  • The kneaded dough is rolled out into a thin chapatti.
  • The khoya mixture should cover half of the chapati. Twist the edges inward to close the round. On a low burner, deep-fry these gujias until they are a rich, golden brown hue.
  • With the use of a sieve-style ladle, remove them, let the oil completely drain, and then serve them hot.
